As it once was. We get up early in the morning and choose the best tomatoes, one by one, by hand. We wash them and make a single pass, with the sole addition of salt. We let the hours tick to the hum of the pot, after which we carefully arrange the glass jars, before filling them and storing them for the winter.

This is what our grandparents used to do and so we continue to do, a little out of nostalgia, a little out of taste, a little bit because we can't do without the unsurpassed flavor of the artisanal puree.
